The composition

If vanilla makes you think of dessert, this is not that vanilla. This CO₂ extract of Vanilla planifolia grown in Madagascar is earthy, dark and dusty, of unusual depth, and a real pleasure to smell.

+ 01 — Origin and botany

Vanilla planifolia Andrews is a climbing orchid of the Orchidaceae family, native to southern Mexico, Central America, Colombia and northern Brazil. In Madagascar it is an introduced species.

The aromatic part is the fruit, the pod. Outside its native range, the flower is hand-pollinated, one by one, so that it sets fruit.

+ 02 — Extraction and production

In the green pod, vanillin is bound to a sugar as glucovanillin, which has no smell. During curing, the pod’s own enzymes release it; traditional curing yields around 2% vanillin on average.

The cured pods are then extracted with CO₂ in French laboratories. CO₂ acts as a low-temperature solvent and evaporates without leaving any residue. A CO₂ extract is not an absolute: it requires neither organic solvents nor the ethanol washing of a concrete.

+ 03 — Olfactory profile

The extract. Earthy, dark and dusty, with a powdery feel and very marked depth. Nothing like sweet baking vanilla.

Compared with the absolute. Vanilla absolute is heavier and oilier; this CO₂ extract is drier and reads more cleanly, and is a real pleasure to smell.

+ 04 — Uses in perfumery
  • Ambers and orientals: dark depth with benzoin, labdanum and resins.
  • Earthy and powdery accords: with iris, patchouli and woods.
  • Grown-up gourmand: with cocoa, coffee or tobacco, far from dessert sweetness.
